Japanese Style Eggplants
 

 

 I.     Recipe name: Japanese Style Eggplants

II.     Ingredients:

  1. 3-4 Japanese eggplants

  2. Textured vegetable protein (TVP) minced pork** (or vegetarian beef burger**), soaked until soft, drained

  3. Japanese miso*

III.     Directions:

  1. Split the eggplants in half, then cut into 3 sections (6 pieces per eggplant).

  2. Mark the surface of each piece with the parallelogram pattern.

  3. Shallow-fry both sides of the eggplant pieces in a non-stick frying pan.

  4. Mix the miso with 2 teaspoons water and pour over the eggplants.

  5. Add the TVP pork (or the canned vegetarian beef burger) and cook for about 1 minute.

  6. Add a pinch of brown sugar and dark soy sauce if desired.

  7. Cook until the sauce thickens and serve.
