Vegetarian Chicken and Pumpkin Soup

 

I.     Recipe name: Vegetarian Chicken and Pumpkin Soup

II.     Ingredients:

  1. ½ pound pumpkin, peeled, seeded, washed, and cut into bite-sized pieces

  2. 150g vegetarian chicken**, thawed, cut into bite-sized pieces, and pan-fried in hot oil

  3. 6 ears tea-tree mushrooms*, soaked in water, rinsed, and diced

  4. 2 slices ginger

III.     Seasonings:

  1. 1 teaspoon salt

IV.     Cooking utensils:

  1. Non-stick frying pan

  2. Soup pot

V.     Directions:

  1. Put 3 liters water in a soup pot and bring to a boil. Then, add in all the ingredients and cook for 1 hour. Season with salt.
