Salad:

½ piece (8 oz. or ¼ kg) smoked
wheat gluten**,
thinly sliced
- 1 tomato, thinly sliced
- 1 shallot, thinly sliced
- ½ cup finely chopped cilantro (fresh coriander)
- ½ teaspoon dried chili pepper

1 teaspoon roasted rice powder*
Vinaigrette:

4 teaspoons soy sauce (can use
Healthy Boy Brand)*
- 3 teaspoons lime juice
- 2 teaspoons brown sugar
Garnish:
- ½ bunch Romaine lettuce, washed and cut into small pieces
- Some fresh mint leaves, washed and finely chopped

- Mix all ingredients for the vinaigrette together in a bowl. Put aside.
- In a large bowl, combine all the salad ingredients together. Mix well. Pour the vinaigrette mixture onto the smoked wheat gluten salad.
Decoration:
{On a big plate, first place the Romaine lettuce garnish all around as a base, add the smoked wheat gluten salad mixture on top, and sprinkle with the chopped fresh mint for color and flavor.
