Clay-Pot Potatoes and Mushrooms
II. Ingredients:

package monkey head mushrooms**

ears shiitake mushroom*

Tablespoon vegetarian oyster sauce*

Tablespoon dark soy sauce*
IV. Starch solution:

teaspoon cornstarch
or chestnut powder*,
1 Tablespoon water

Directions:

Soak shiitake mushrooms in water until
soft. Cut potatoes into small cubes.

Preheat 1 Tablespoon cooking oil in a
frying pan. Fry ginger on high heat until fragrant. Add the
potatoes and continue to stir for 1 minute. Add monkey head mushrooms and
shitake mushrooms. Stir until well mixed.

Add some water, the seasonings, and
sliced carrots. Simmer for 5 to 10 minutes. Add the starch
solution at the end.

Transfer to a clay pot.

Place the clay pot on the stove,
cook until boiling. Remove from heat and serve.
