Ingredients:

Japanese eggplants
-
Textured
vegetable protein (TVP) minced pork**
(or vegetarian beef burger**),
soaked until soft, drained

Japanese
miso*
III.
Directions:

Split
the eggplants in half, then cut into 3 sections (6 pieces per eggplant).

Mark the surface of each piece with the
parallelogram pattern.

Shallow-fry
both sides of the eggplant pieces in a non-stick frying pan.

Mix the
miso with 2 teaspoons water and pour over the eggplants.

Add the
TVP pork (or the canned vegetarian beef burger) and cook for
about 1 minute.

Add a pinch
of brown sugar and dark soy sauce if desired.
-
Cook until
the sauce thickens and serve.
